Shredded Carrot and Beet Beauty Salad Recipe

This salad of shredded root vegetables and dark salad leaves is packed with skin-loving vitamins and minerals.  Really simple and tasty!  Beets are an excellent source of folate, vitamins C, magnesium an potassium.  Carrots are great source of vitamins A, vitamins K, fiber, vitamin C and potassium.  Hazelnuts, I have outlined the benefits in my recent why I love Rawtella post.

Beet and Carrot Beauty Salad

(serves 4)


12 ounces (350g) carrots

8 ounces (225g) raw beets

4 ounces (115g) mixed dark salad leaves such as spinach, watercress, kale, chard

2 tbsp chopped fresh mixed herbs

1/4-1/2 cup – 2 ounces roughly chopped raw hazelnuts

opt.   4 ounces (115g) granny smith apple (shredded)

For the dressing

2tbsp hazelnut oil (you can use any oil of your choice if you don’t have this handy)

1tbsp olive oil

juice of 1 lemon

1tbsp raw honey

1 clove garlic, crushed

sea salt to taste

freshly ground pepper

Peel and coarsely grate or shred the carrots, beets and apples if you are using them.  put in a bowl

Add the salad leaves and mixed hers.  Toss.

Put the oils, lemon juice, honey, garlic and seasoning in a bowl, and whisk until throughly mixed.

Drizzle the dressing over the salad, add the hazelnuts and toss.  You can also sprinkle the hazelnuts on top when you portion out.
